Pecan Pie Cobbler

Ingredients:

 

For the topping:

1 cup all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1/2 cup milk

For the filling:

1 cup light corn syrup

1/2 cup granulated sugar

1/4 cup unsalted butter, melted

3 large eggs

1 teaspoon vanilla extract

1 cup chopped pecans

 

Instructions:

Preheat oven: Preheat your oven to 375°F (190°C).

Make topping: In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the melted butter and milk until just combined.

Prepare baking dish: Grease a 9x13 inch baking dish.

Pour filling: Pour the corn syrup, granulated sugar, melted butter, eggs, and vanilla extract into the prepared baking dish.

Add pecans: Sprinkle the chopped pecans evenly over the filling.

Drop topping: Drop spoonfuls of the topping batter over the filling.

Bake: Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.

Serve: Serve warm with a scoop of vanilla ice cream.
